Watermelon Popsicles

It only takes a few ingredients to make these oh-so-simple popsicles.

Ingredients:

Makes 10 (depending on size of each popsicle mold)

6 cups seedless watermelon chunks (rinds removed)

2 limes, juiced (about 4 tablespoons of juice)

3 tablespoons honey, agave, or sugar (with perhaps more added later)

Preparation:
Place all the ingredients in a blender. Blend until smooth.

Taste the mixture for sweetness (remember that the mixture will taste a little less sweet after being frozen). Add any additional honey, agave, or sugar to taste, then blend again.

Using popsicle molds that incorporate their own popsicle sticks, pour the mixture into the molds; be sure not to overfill them.

Freeze for 4-6 hours or preferably overnight.

Once frozen, remove the popsicle molds from the freezer. Run each mold under warm tap water for 15 seconds, then gently pull out each popsicle. Serve immediately.
