A daiquiri is basically just white rum, lime juice, and a sweetener. Add watermelon – and mix it all together in a blender – and the happiest of smiles results. Using a blender makes the drink especially easy to taste and adjust depending on the sweetness of the watermelon. In case you were wondering, daiquiri is the name of both a beach and an iron mine in Cuba – and now, of course, of a cocktail served everywhere.
Ingredients:
4 cups chunks of seedless watermelon (about 2 pounds peeled watermelon)
1/3 cup fresh lime juice (or more to taste)
½ cup white rum
½ tablespoon sugar, agave nectar, or honey (optional and to taste)

Preparation:
In a blender, puree the watermelon chunks, lime juice, and rum. Taste, and add more lime juice and/or sweetener as desired. Add some ice and blend until cold and smooth.
