Watermelon Coconut Smoothie

Coconut and watermelon are subtle summery flavors that combine well. Add lime and mint, put them all in a blender, and a memorable creamy smoothie is the result.

Ingredients:
Serves 2

4 ½ cups chilled fresh watermelon chunks

2/3 cup coconut milk

¾ cups coconut-flavored yogurt

½ cup mint leaves, lightly packed

4 tablespoons fresh lime juice (about the juice of 2 limes)

1 tablespoon real maple syrup (optional, but you’ll like it)

Preparation:
Put all the ingredients in a blender and combine until smooth.
